Buddah Bowl With Hemp Seeds

1 cup quinoa, or substitute with cauliflower rice if you are grain free

1 ¾ cups of water

1 tablespoon of miso

Kosher salt

1 medium avocado

2 medium scallions

2 tablespoon olive oil, divided

4 packed cups of baby spinach (about 4 ounces)

1 cup of fermented red cabbage or beet kraut

½ of kimchi

4 tsp hemp seeds

INSTRUCTIONS

  1. Rinse 1 cup quinoa, then place in a medium saucepan. Add 1/ ¾ cups water, 1 tablespoon of miso, and a generous pinch of kosher salt, and bing to a boil. Reduce the heat to a simmer and cook uncovered until the quinoa is tender, 10 to 12 minutes. Remove from heat, cover and steam for 5 minutes. Meanwhile, thinly slice 1 avocado and 2 medium scallions.
  2. Heat 1 ½ teaspoons of olive oil in a large nonstick skillet over medium heat, add the baby spinach and cook, tossing frequently, until wilted, 1 -2 minutes
  3. Divide quinoa between 4 bowls and top each with kimchi, sliced avocado, scallions, spinach, cabbage and hemp seeds
